What does it mean when the Cacao block has a white residue or look different?
The white residue that sometimes appears on ceremonial grade cacao blocks is likely cacao butter bloom. It does not change the components of the ceremonial grade cacao you are drinking. Here’s a closer look at these two common phenomena:
Cacao Butter Bloom
1. What It Is:
- Cacao butter bloom occurs when the cacao butter in the cacao block rises to the surface and recrystallizes, forming a white or grayish film.
2. Causes:
- Temperature Fluctuations: Changes in temperature can cause the cacao butter to melt and then solidify on the surface.
- Storage Conditions: If the cacao blocks are stored in a warm environment or if there are fluctuations in storage temperatures, butter bloom is more likely to occur.
3. Effects:
- Appearance: Cacao butter bloom affects the appearance, giving it a white, streaky, or dusty look.
- Taste: It does not significantly affect the taste or quality of the cacao
